Just a few more thoughts, now that I've had more than a day to mull over it.

It occurs to me that while I'm sure Harry will be very close with his godson, Teddy might also find a surprising confidant and mentor in the form of Neville. Both are raised by their grandmothers after their parents are taken from them altogether pointlessly. Harry's parents literally died for him; Neville and Teddy's parents, while generally fighting against Voldemort and his Death Eaters, were killed/tortured to no real purpose. I think Neville would really be able to sympathize with Teddy in a way that even Harry couldn't. Just my opinion.

Now, the main thing I wanted to do was compare Book 1 and 7. As I expected, they have parallels in the same way that 2&6 and 3&5 do. I'm sure I haven't thought of everything, but here's just a few things I've noticed so far:

Book 1: We meet Dumbledore and learn that he is a great and wise wizard.
Book 7: We learn the details of Dumbledore's past and realize that he has some rather dark things in his past, but is ultimately wiser for it.

Book 1: We see Dumbledore use his "Put-outer."
Book 7: Dumbledore bequeaths the object now known as the Deluminator to Ron.

Book 1: Voldemort has been defeated at Godric's Hollow after killing Harry's parents, and Harry is taken away from it.
Book 7: Harry returns to Godric's Hollow, has another showdown with Voldemort, and relives the deaths of his parents.

Book 1: Harry is brought to Privet Drive by Hagrid on Sirius's flying motorcycle.
Book 7: Harry leaves Privet Drive with Hagrid on Sirius's flying motorcycle.

Book 1: Hagrid gives Hedwig to Harry for his birthday present.
Book 7: Hedwig is killed while Harry and Hagrid are fighting Death Eaters.

Book 1: We hear of Grindelwald, the dark wizard whom Dumbledore defeated, which we take as a sign of Dumbledore's great heroism.
Book 7: We learn that Grindelwald and Dumbledore had been friends, a part of Dumbledore's past that is far from heroic. Also, Grindelwald turns out to be linked to the Deathly Hallows, and we learn he is still alive and imprisoned just before he is murdered by Voldemort.

Book 1: Snape despises Harry but continually protects him from Quirrell (and thus Voldemort).
Book 7: Snape still despises Harry but continually protects him from Voldemort, eventually helping Harry defeat him.

Book 1: The Trio first comes together.
Book 7: The Trio breaks apart when Ron leaves, but is reformed to eventually become stronger than ever.

Book 1: Ron makes Hermione cry all day.
Book 7: Ron makes Hermione cry for weeks.

Book 1: Hermione loses her head when faced with Devil's Snare, wondering how to get fire until Ron reminds her she is a witch.
Book 7: Ron loses his head when faced with the Whomping Willow, wondering how to get in without Crookshanks until Hermione reminds him he is a wizard.

Book 1: Ron uses the levitation spell to defeat the cave troll.
Book 7: Ron uses the levitation spell to get into the Whomping Willow.

Book 1: Harry catches his first Snitch by nearly swallowing it.
Book 7: Dumbledore bequeaths that first Snitch to Harry, and he activates it by putting it to his mouth.

Book 1: Harry sees his parents in the Mirror of Erised at Christmas and is almost consumed by his longing to see them.
Book 7: Harry visits his parents' graves in Godric's Hollow at Christmas and is devastated anew by their loss, even wishing he were dead as well.

Book 1: We learn of Gringotts, the cleverness of the goblin bankers and the foolishness of trying to rob it, and the rumor that their are dragons guarding the deepest vaults.
Book 7: We see the Trio robbing a vault at Gringotts with the help of a double-crossing goblin, escaping after his betrayal on the back of a dragon.

Book 1: Norbert the Norwegian Ridgeback.
Book 7: Norberta the Norwegian Ridgeback.

Book 1: Harry receives his father's Invisibility Cloak from Dumbledore.
Book 7: Harry learns that the Invisibility Cloak is one of the Deathly Hallows, and that Dumbledore had suspected this, which was why he had it in his possession upon the death of Harry's parents.

Book 1: Harry learns for the first time what happened to his parents and who they were.
Book 7: Harry meets his parents via the Resurrection Stone and makes their sacrifice worthwhile.

Book 1: Harry faces Voldemort at the beginning and end of the book.
Book 7: Harry faces Voldemort at the beginning, throughout the middle, and finally at the end of the book.

Book 1: Voldemort's Avada Kedavra curse rebounds off of Harry and kills him instead, though a part of him survives.
Book 7: Voldemort's Avada Kedavra curse rebounds off of Harry and kills him instead, this time permamently.

That's all I can think of for now. I'm sure there's more.

Wow, you sure came up with more than I did! I think I have a couple to add to your list, nonetheless:

I like your references to Harry and his parents and the Mirror of Erised, but the Mirror is specifically brought up in book 7, as well. After reading the newspaper articles, Harry thinks about how he does not believe Dumbledore told the truth when Harry asked him what he saw in the Mirror.

In both books, Harry races against time to find magical object(s) before Voldemort finds said object(s). In both cases, the object(s) will bring immortality to the Dark Lord. Also, he needs Ron and Hermione's specific strengths and skills to overcome the obstacles to the object(s).

In book 1, the Bloody Baron is introduced. In book 7, the Bloody Baron's back story is explained.

In book 1, Rowling intended to have Dean Thomas find out about his wizarding father. In book 7, Rowling hinted about this wizarding background.

I think that's it for now. There's probably more, but you've made an impressive list.

Good points! I had a sort of nebulous notion about the second point, finding objects/getting past obstacles, but you've phrased it better than I would have.
